- 4 basic steaks (Chuck Eye, Denver, Sirloin, or Sirloin Tip)
- 2 braising cuts (Osso Buco, Short Ribs, or Stew Meat)
- 1 roast (Chuck, Eye Round, or Rump)
- 1 soup bones
