The USDA requires a hot dog to be fully cooked before it leaves the facility — preserved and made shelf-stable in a way that makes health minded parents uncomfortable when they read the label. Ours is a fresh sausage. No nitrates, no nitrites, no preservatives of any kind. The color comes from beet root. The flavor comes from a blend of mustard seed, celery seed, mace, paprika, and garlic — the same spice family that defines the classic American frankfurter.

Grill over medium heat to an internal temperature of 160°F, about 10 to 12 minutes, turning often. Cast iron works equally well. Serve in a toasted bun with mustard and relish and let them think it's just a hot dog — or tell them and watch them not care because it tastes exactly right.
