If there is one sausage every American home cook already knows how to use, it is Italian. In pasta sauce, on pizza, grilled alongside peppers and onions, crumbled into a frittata or a stuffed shell — it belongs in more places than almost anything else in your freezer. The difference with ours is the pork and the spice work behind it — blends developed exclusively for Wishbone by the Charleston Spice Company, on meat with real flavor behind it.

Ours comes in three varieties. The Sweet is the classic — pasture raised pork seasoned with garlic, basil, oregano, and fennel, as simple and honest a recipe as we make. The Hot is built on the same foundation with paprika, red chili flake, and birdseye cayenne added in earnest. This is not grocery store hot Italian where black pepper passes for heat — it is appropriately, unapologetically hot, and it makes a better pasta sauce for it. Many of our customers buy Sweet and Hot together and mix them in the pan, which is worth doing. The Savory is something different altogether — pasture raised chicken seasoned with tomato powder, porcini mushroom powder, fennel, basil, and oregano. It took considerably more work to develop than the pork versions and it earns its place alongside them, delivering a depth that surprises most people who try it for the first time.

Cook any of them the same way: grill, cast iron, or oven at 400°F for 20 minutes. Slice them into a sauce, crumble them out of the casing onto a pizza, or serve them whole alongside roasted peppers. Four links per pound for the pork varieties, five links per pound for the chicken.

If you are building a meat sauce, our ground beef and ground pork are the natural companions — the classic blend that outperforms either protein on its own. Our bone broth pulls that whole pot together.
