When you roast a whole bird, nothing is wasted — the skin renders and crisps over meat that stays juicy from the fat beneath, the bones and carcass perfume the pan drippings, and every part of the bird contributes to the final result in a way that boneless, skinless cuts simply cannot replicate. It is also the best value in the shop by a significant margin. Breaking a chicken into parts takes time, skill, and labor, and that cost is reflected in the price of every cut we sell. Buy the whole bird and you skip that premium entirely — getting breast meat, thigh meat, drumsticks, wings, and a carcass rich enough to make several quarts of extraordinary stock, all for considerably less per pound than any individual cut.

Our chickens are raised on open pasture at Wishbone Heritage Farms in St. George, SC, on a deliberate, systematic rotation designed to keep the birds on fresh ground, the soil healthy, and the forage abundant. This is managed agriculture at its most intentional — the flock moves on a planned schedule so that every bird has access to living pasture, insects, and grasses at every stage of life. That active lifestyle builds real muscle tone and develops the deep, complex flavor that properly raised poultry is known for. No antibiotics, no hormones, no shortcuts.

Most of our roasters come in between 3.5 and 5 lbs — a size that feeds a family of four comfortably with leftovers for stock. Birds are sold in half-pound increments so you can choose exactly what you need. Bulk packs of 5–8 birds are available at 10% off for those who like to keep a well-stocked freezer.

To roast: Pat the bird dry, season generously inside and out with salt — do this the night before if you can. Roast at 425°F on a rack, 15 minutes per pound, until the thigh reads 165°F. Rest 10 minutes before carving. Save the carcass for stock, or try our Bone Broth if you prefer it ready to go.
