Skewer them whole and grill them over high heat for a dramatic presentation that's common across Southeast Asia and increasingly popular at American cookouts — the whole wing bastes itself as it cooks, producing crispy skin and juicy meat without any prep work at all. Or cut them at the joints into flats, drumettes, and tips for traditional buffalo wings, and cook them any way you like from there.
