Meatball Mix

The meatball deserves better than a supporting role. Ours starts with our grass fed beef, eggs from our pasture raised hens, and riced cauliflower in place of breadcrumbs — a binder that holds the mix together without weighing it down or muddying the flavor. Roasted garlic, basil, parsley, and grains of paradise — the same African peppercorn that anchors our breakfast sausage blend — finish it into something that tastes like it has been simmering in someone's kitchen for hours before it even hits the pan.

One full pound pack

Roll them to whatever size suits the occasion. Small for a cocktail spread or a soup. Medium for pasta, pesto, or a hero. Large for a braise in tomato sauce where they can take their time and give something back to the liquid. Sear them hard in a cast iron first regardless of what comes next — that crust is not optional.

The mix is raw and ready to form straight from the pack. One pound makes approximately 16 medium meatballs.
