Pasture raised chicken backs, necks, feet, and skins — the four most collagen-rich parts of the bird. Smoked ham hocks and split pig feet for the Southern pot. Oxtail, stew hen, and pig tails for the long simmer that fills the house with something worth coming home to. And our own finished bone broth — slow simmered for 24 hours at a USDA-inspected facility from the same grass fed beef and pasture raised chicken we sell throughout the shop.
