The drumstick is the most approachable cut on the bird — bone-in, skin-on, naturally portioned, and almost impossible to overcook. The dark meat stays juicy under high heat, the skin crisps beautifully, and the bone makes it easy to eat by hand. Kids love them. Adults do too.

Slow cook them in the crock pot until they fall off the bone, grill them over a hot fire until the skin is charred and crispy, fry them golden, or bake them at high heat until the skin is lacquered and caramelized. They take marinades well, hold up to bold spice rubs, and work in cuisines from all over the world — jerk, teriyaki, berbere, classic barbecue.
