The heat is mild — white pepper adds a subtle warmth in the background without making a statement. This is a sausage that pleases everyone at the table without asking anything of them.

Grill over medium heat to an internal temperature of 160°F, about 12 to 15 minutes. Cast iron works equally well. In the oven at 375°F for 25 minutes if you prefer hands-off. Serve on a crusty roll with whole grain mustard and sauerkraut, alongside roasted potatoes, or as the mild anchor on a mixed grill where the andouille and chourico are doing the heavy lifting on heat.
