The leg quarter is the whole dark meat section of the chicken — thigh and drumstick still connected, bone-in and skin-on. It's the most forgiving cut on the bird: the bone conducts heat evenly, the skin bastes the meat as it cooks, and the higher fat content of dark meat means it stays juicy even if you push it a few minutes past done.
Roast them high and hot for crackling skin, braise them low and slow until they pull from the bone, or marinate them overnight and finish them on the grill. They take bold spices well, hold up beautifully to long cooking, and feed two people generously per pair. In almost any application where a whole chicken feels like too much, leg quarters are the answer.
