Description

Four Sundays. Four pots. Roughly forty-eight servings of meals and under two hours of actual work across the whole month. Time to blow the dust off your crockpot and put it to work for you.

The trade a braise offers is the best one in cooking. Fifteen minutes in the morning, then six or eight hours where the pot does everything and you go about your day. By evening the house smells like somebody has been paying attention since breakfast, and all you did was walk past it a few times.

This bundle builds four of those Sundays.

Every one of them starts with our bone broth — ten pouches total, because a real braise wants real liquid and not water or a carton of dirty water and salt. That is not a detail. Good broth is the difference between comfort food that is merely filling and comfort food that actually restores you. Bones simmered down for a day, full of collagen and minerals and enough body to coat a spoon. It is why a pot of stew built on the real thing tastes finished, and why you feel better after it instead of slower.

Sunday one — pulled pork. Rub the shoulder the night before, set it in the morning, and by the time anybody asks what is for dinner it has been ready for an hour. A dozen sandwiches out of one shoulder, and it is even better on the second day than the first. (One 5 pound Boston butt or boneless picnic shoulder, 1 chicken bone broth)

Sunday two — beef chili. Beef that shreds apart under the spoon, dark with chipotle and smoked paprika, thick enough to stand the spoon up in. Chili was braised chunks of hearty beef before anybody thought to grind it, and ground stuck because it was cheap and fast. Ground is still in the dropdown if you prefer it. (Four pounds of beef for stew or ground, three beef bone broth, one beef tallow)

Sunday three — chicken cassoulet. Potatoes and carrots spend the day drinking in deep flavors and broth until they surrender under a fork with tender chicken and white beans. The French built theirs on pork and duck. Ours runs on the drum, the hardest working muscle on the bird and the only chicken cut that can take that kind of time. (Three pounds of chicken for stew, three chicken bone broth)

Sunday four — beef stew. Broth that will coat a spoon. Hearty vegetables and cubes of beef that soak it up. Fill the pot, give it the afternoon, and do not touch it. A real lesson in finishing a perfect pot at the very end to feed your soul. (Three pounds of beef for stew, three beef bone broth)

Detailed recipes for all four meals — tested, revised, and approved by Farmer David — are linked above and in our library.

What does this all work out to? This bundle saves you 27% off of individual retail for fifteen pounds of pasture raised meat, ten pouches of bone broth, and our beef tallow — $62.50 a Sunday and $5.20 per serving across forty-eight servings total. You bring the onions, carrots, potatoes, beans, and buns. Call it another thirty or forty dollars across the whole month.

Every one of these portions and freezes well, which is the part people figure out in month two. Cook Sunday, eat Thursday, and your crockpot has earned its counter space back.

If braising becomes the routine, our Beef Short Ribs and Osso Buco are the natural next step once you have the rhythm.
