Description

Pasture-raised heritage pork bacon, uncured and smoked the old-fashioned way. The difference between bacon from a pastured heritage breed and what you find at the grocery store is immediately apparent — richer fat with real depth of flavor, and a smokiness that holds up in the pan instead of cooking away to nothing. No nitrates, no nitrites, no shortcuts — just pork and smoke from pigs raised the right way.

Dry rubbed with sea salt and a touch of brown sugar — approximately 2 grams per serving to avoid the use of nitrates — and never wet brined. Wet brining is the commercial shortcut that pumps water weight into the belly, inflating the package weight while diluting the flavor and reducing what you actually get in the pan. Ours loses nothing in the cooking because there's no added water to lose.

Available in three cuts to suit how you cook. Thick sliced is the flagship — substantial strips that render beautifully and hold their structure whether you're frying, baking, or laying them over a roast. Sliced Bacon Ends offer the same quality bacon at a better price — pieces may be misshapen or packages may have broken vacuum seals, but they are every bit as delicious, ideal for chopping into lardons or crisping up for a breakfast scramble. Bacon Chunks are the cook's choice for slow cooking and big luxurious lardons — perfect for seasoning a pot of collards, split pea soup, baked beans, or any braise that benefits from smoky pork fat.

Select the cut that best suits your needs.

David's bacon is excellent. I thaw it, cut it into separate servings (wife is pescetarian... so I;m the only one who eats the bacon), and re-freeze. That works great for me.

We recently switched to Wishbone farms bacon as the other farm’s we were using had just got too salty. This bacon is perfect. Cooks up to a lovely crunchy breakfast rasher or works really well for added flavor in other dishes. We love putting this bacon with Wishbone farm Chicken **** in white wine. Delicious!

Not my favorite product…this is not to say others might love it. I find it very salty and I’m not crazy about the flavor. Will not order again….sorry!

Karen, we appreciate you being candid. Small-batch animal raises and individual slab processing means no two runs are identical. These all vary in ways a commercial operation would standardize away. That variation is part of what makes it real, but we understand it's not for everyone. We'd love to make it right — reach out anytime.

Excellent

Delicious thick cut bacon. Unlike any bacon you buy is a store. Almost like a bacon steak!

Best Quality Anywhere

This is far and away the best bacon I’ve ever had. Don’t get me wrong Benton’s makes a good bacon but smoked is a whole other thing. Wishbone bacon is thick, meaty, and fatty all at the same time and it doesn’t need smoking to support it’s soft beautiful flavor. I like to cook a pound at a time on low convection on a roasting pan in the oven to render it while also browning the edges. The texture is incredible on the slab bacon and even more fun with the jowl bacon. My mom is a real stickler for quality and she is OBSESSED with this bacon. You won’t find another bacon as satisfying with only 1 or 2 slices.
