The pork tenderloin is the leanest and most tender cut on the whole animal — a long, slender muscle that runs along the spine and does virtually no work, producing meat that is exceptionally fine-grained, mild in flavor, and quick to cook. From a pasture-raised heritage breed animal, the tenderloin has a depth of flavor that the lean cut from a commodity hog simply cannot match.

Fast and hot is the approach — sear it in a cast iron pan and finish it in the oven, grill it over high heat, or slice it into medallions and cook them like small steaks. The tenderloin is done in twenty minutes or less and should be pulled at a blush of pink in the center for the best result. It takes marinades and rubs exceptionally well and pairs beautifully with bold flavors — mustard, herbs, garlic, citrus, and spice all work in its favor.
