The ginger is forward and warm, with the honey balancing the spice with nature's touch of sweetness. Rosemary, sage, and thyme round out the recipe into something that pleases the nose, mouth, and soul.

A word on cooking heat: raw honey caramelizes quickly, especially on a stovetop, and can burn before the center is cooked through. Medium-low in a cast iron is the move — give it time, turn it often, and let the sugars develop into a golden crust rather than a char. On the grill, keep it away from direct flame and finish over indirect heat. The oven is the safest bet — 375°F for 20 to 25 minutes produces a beautifully lacquered link worth the patience.
