The T-bone is one of the most recognized cuts in American food culture — the bone that launched a thousand steakhouses, the shape that appears on every butcher diagram, the cut most people picture when they think of a serious piece of meat on a grill. It exists on the pig for exactly the same reason it exists on the cow: where the loin and the tenderloin run parallel and a single cross-cut captures both on one bone.

Two muscles, one chop. The loin side delivers the bold, meaty character that defines a great pork chop. The tenderloin side is the most tender muscle on the animal — fine-grained, clean, and genuinely different in texture from everything beside it. The bone connects them during cooking and the result on the plate is a chop that gives you two experiences in the same sitting.

At 1.5 inches thick, cook it like a steak. Season generously with salt the night before. Sear hard on both sides in a screaming hot cast iron with lard or tallow until deeply crusted, then finish in a 375°F oven to 135°F internal. The grill works equally well — direct heat to build the crust, indirect to finish. Rest it five minutes, work around the bone, and serve both muscles together.
