The beef tenderloin tapers as it runs toward the sirloin, and the tail end is where the filet mignon becomes something more approachable without losing what makes the muscle worth knowing. Same tenderness, same clean flavor, same grass fed, grass finished beef --- just a smaller, thinner portion that suits a weeknight without the occasion price.
Because it is lean and thin, it cooks fast. Cast iron, high heat, tallow or butter, two minutes per side. Pull at 120°F and rest five minutes. Slice it against the grain and it will surprise you.
