Our pasture raised pork lard is rendered from leaf fat — the purest, most prized fat on the animal, found around the kidneys and loin. It is processed by Farm Broth, a USDA-inspected facility in Georgia, where it is rendered low and slow and carefully filtered for clarity, producing a clean, white lard with a mild flavor and silky smooth texture.
Leaf lard has long been the secret ingredient of serious bakers. Its neutral flavor and exceptional shortening properties make it the gold standard for pie crusts, biscuits, and pastry — producing a flakiness that butter and vegetable shortening simply cannot match. It is equally at home in the skillet, with a high smoke point that makes it ideal for frying, sautéing, and cooking eggs. Like tallow, it is free from the chemical solvents and additives found in many industrial seed oils.
