Description

Almost everyone has eaten an egg. Very few people have eaten a good one. The difference is not subtle and it does not require a trained palate to notice. Crack one of ours next to a grocery store egg and the difference is immediate — a deep orange yolk instead of a pale yellow one, sitting higher, holding its shape, with the white staying tight instead of running flat across the pan.

That color is not decoration. It is beta-carotene, and it comes from what the hen ate. Ours are rotated onto fresh pasture daily, foraging grass and insects the way chickens were meant to, supplemented with nine separate custom designed and milled rations throughout their life. Antibiotic free and vaccine free from hatch.

The nutrition for you follows the hen's diet. Penn State researchers compared pastured hens to caged hens and found twice the vitamin E, twice the long-chain omega-3, and less than half the omega-6 to omega-3 ratio. A 2014 study in the Journal of Nutritional Biochemistry found yolk vitamin D three to four times higher in hens with real outdoor access, because a hen makes vitamin D in sunlight the same way you do. A bird that never goes outside cannot do that, no matter what she is fed.

The difference carries into cooking. Scrambled low and slow they set richer. Fried, the yolk stands and the white holds instead of spreading thin. In baking, it is structural as well as flavorful — firmer whites whip into meringues and soufflés more easily, and the richer yolks give a more tender crumb in cakes and custards. Bakers who know seek them out for exactly this reason.

When available we offer five sizes, Medium through Super Jumbo. Larger sizes cost more per dozen and less per ounce. Quantity discounts run from 2 to 15 dozen depending on size and what the flock is giving us that week, up to 25% off.

Keep them cold. South Carolina law caps the expiration date at 45 days from pack, it is marked on every carton, and if you keep them refrigerated you will get all 45.

Eggs from Pasture Raised Hens is available for pickup on Thursdays in Summerville, Park Circle, Mount Pleasant, and downtown Charleston, and on Saturdays in Summerville and at the Sea Island Farmers Market on Johns Island. Order by Wednesday 10 PM for Thursday, Friday 6 PM for Saturday.

Pick up at the farm in Saint George Thursday through Saturday, or by appointment if you need something different.

Eggs from Pasture Raised Hens is available for free local home delivery across the Charleston area on orders over $150 — downtown Charleston, West Ashley, James Island, Johns Island, North Charleston, Park Circle, Hanahan, Daniel Island, Mount Pleasant, Goose Creek, Ladson, Summerville, Ridgeville, and St. George. $20 flat under $150. Farmer David delivers personally twice per month, typically on Sundays.

Eggs are pickup and local delivery only. They do not travel well enough to ship, so we do not ship them.

Based on the appearance and taste, these eggs are so much better than grocery store eggs that of course they're worth it. I don't eat grocery store eggs or chicken any more, and if I didn't have Wishbone, I simply would not eat them at all.
