Our grass fed beef marrow bones are split lengthwise in a canoe cut, which fully exposes the marrow and making them as beautiful on the plate as they are delicious. 

Roasting them is one of the simplest and most rewarding things you can do in a kitchen. Season with a little sea salt and roast at 425°F for about 15 minutes. You are looking for marrow that is soft and glossy and just loosened in the bone. Do not wait for it to bubble. Marrow renders faster than most people expect, and once it starts to run it ends up in the pan instead of on your toast. Serve immediately with crusty bread and a sprinkle of fresh herbs.

Sold in pairs and priced by weight. Marrow sits in the hollow center of the shaft, and that hollow is widest at the middle of the bone and tapers toward the joint. The larger sizes are longer sections from the middle, so they carry noticeably more marrow. If marrow is what you are after, size up.

One thing worth knowing before you order: our cattle are grass finished and never reach the frame size of grain fed cattle. Our bones are smaller than the ones in a grocery case, and there is less marrow in each one. That is the trade for everything else grass finishing gives you.

Marrow Bones (Canoe Cut) is available for pickup on Thursdays in Summerville, Park Circle, Mount Pleasant, and downtown Charleston, and on Saturdays in Summerville and at the Sea Island Farmers Market on Johns Island. Order by Wednesday 10 PM for Thursday, Friday 6 PM for Saturday.

Pick up at the farm in Saint George Thursday through Saturday, or by appointment if you need something different.

Marrow Bones (Canoe Cut) is available for free local home delivery across the Charleston area on orders over $150 — downtown Charleston, West Ashley, James Island, Johns Island, North Charleston, Park Circle, Hanahan, Daniel Island, Mount Pleasant, Goose Creek, Ladson, Summerville, Ridgeville, and St. George. $20 flat under $150. Farmer David delivers personally twice per month, typically on Sundays.

Outside the area? We ship frozen via FedEx Ground to 21 states and Washington, DC. $250 minimum, $49.75 flat rate. If you are near a pickup location or inside the delivery area, that is the better option — fresher product and no shipping cost.

There wasn’t much marrow through the cut, it could be that I over cooked them, I usually get the canoe cut from Publix and this is my first time cooking grass fed-grass finished beef.

Thank you for writing this. Two things are probably at work. The first is size. The 0.80 lb pack from your order is one of our smallest available sizes, likely short sections from a narrower part of the bone. Marrow sits in the hollow center of the shaft and that hollow tapers toward the joint. A bigger pack means longer sections from the middle of the femur, where the cavity is widest.

The second is that our cattle are generally smaller than what fills a grocery beef case. Grass finishing takes longer and the animals never reach the frame size of grain fed cattle, so the bones themselves are smaller. Ours will not look like the Publix canoe cut. That is a real difference and worth knowing before you order.

On cooking, marrow renders faster than most people expect. 425 degrees for about 15 minutes, and you want it soft and glossy rather than bubbling. Once the fat starts to run it ends up in the pan instead of on the toast.

I am refunding you for these now and I will add a pack of the larger ones on me to your next order so you can see the difference.
