Description

Merguez is the street sausage of North Africa — spicy, deeply aromatic, and built on a spice profile that has no equivalent anywhere else in our lineup. Cumin, coriander, caraway, spearmint, and red chili come together in our grass fed beef in a way that is both bold and remarkably coherent. Traditionally made with lamb, the beef version carries the same heat and complexity with a cleaner, leaner finish.

Cook it however suits the occasion. On the grill it develops a caramelized crust that concentrates the spices beautifully — high heat, a few minutes per side, done. In a cast iron it works just as well, and the rendered fat left in the pan is worth keeping for eggs or flatbread. In the oven at 400°F for 20 minutes it's hands-off and reliable. The traditional serve is alongside couscous with harissa and fresh herbs, but it earns its place just as naturally tucked into a crusty baguette, sliced over a grain bowl, or broken out of the casing into a tomato-based ragout with poached eggs on top — a preparation worth knowing if you don't already.
