Description

A great taco starts with the meat and most people settle for a packet of powder and a prayer. Ours is seasoned with a blend built around chipotle, Anaheim, Ancho, and Chimayo chilies — the last a protected heirloom pepper from the Rio Grande valley of New Mexico — finished with cumin, oregano, and a brightness from lime and lemon peel that pulls the whole thing together. We tried other flavor profiles. Chipotle won by a mile and we never looked back.

It comes in three proteins. The beef carries the chipotle smoke beautifully, rich and bold in a way that stands up to every topping you pile on. The chicken is lighter and cleaner, letting the citrus and herb notes come forward. The pork brings a depth and fat that makes the best street taco of the three. All three are worth trying. Many of our customers keep more than one in the freezer.
